Cauliflower soup with scallops recipe from Torsten Schulz, Chef Manager.

Cauliflower Soup

1 small cauliflower

1 small onion

1oz butter

1 small green chili

1 pint of chicken stock

Saute onion and chili in butter, add stock and simmer for 20 minutes.

Blend and season with salt and pepper and add 50mls of cream

 

 

Seared Scallops

Pan fry 4 scallops in some butter ( about 1.5 minutes each side) and serve with
soup.
