Healthy Banana & Oat Cookie Recipe!

Looking for something else to make with the ripening bananas? Sick of banana bread? We love cookies here in The Q Cafe Company, and these little beauties are simple to make and really delicious. High in fibre, these cookies are healthier than a standard cookie these little morsels of goodness pack a flavourful punch without the negative impact! They are egg free and wheat free too!

These cookies are so popular in some of our restaurants, we can’t go a day without making them! The recipe is created by the ever wonderful Chef Karen Dalton. Thanks Karen!

So why not try them today?

Ingredients

  • 125g porridge oats
  • 50g desiccated coconut
  • 2-3 over ripe bananas
  • 1 tbsp honey
  • pinch of flour

Method

Its pretty simple really….

  1. Preheat oven to 180C.
  2. Mash the banana’s.
  3. Combine all ingredients and shape into big cookies.
  4. Please on a tray lined with greaseproof paper.
  5. Bake in a preheated oven at 180C for 15 minutes.
  6. Remove from the oven and allow to cool fully.
