Healthy Tomato, Feta and Pomegranate Recipe
Try our simple and delicious Tomato, Feta and Pomegranate recipe! This little gem of a salad recipe is served to our customers frequently by Executive Head Chef Dave Gorman. They love it! Taking only about 20-25 minutes to make, less if you don’t infuse the ingredients (see below), it’s just perfect on a summers evening. You can use the recipe to wow guests for a mid-summer party or to make a barbecue healthier and more colourful.

The Recipe!
Ingredients
1kg vine tomato, sliced
500g cherry tomatoes, halved
Handful pomegranate seeds
Handful feta cheese crumbled
Maldron salt
Black pepper
Handful of basil leaves, chopped
Extra virgin olive oil
Method
Place the cherry tomatoes in a bowl with the 3/4 of the feta cheese, 3/4 of the basil, some extra virgin olive oil, salt and pepper. Mix and allow to sit for 20-30 minutes to infuse.
Meanwhile, take the sliced vine tomatoes and lay in a circle around the circumference of a place. Work your way into the middle of the plate. Drizzle with extra virgin olive oil and seasoning.
Place the marinated salad in the centre of the plate, piling high for dramatic effect.
Garnish with more feta, pomegranate and basil.
Enjoy outside on a summers evening with some garlic toasted sourdough and your favourite glass of chilled white wine.
